The Year’s Best Beef a brisket from Via Allegro’s pasture-to-kitchen program-is braised in Brunello to the very pink of tenderness.  They serve it over creamy polenta dotted with speck, grana padano and roasted shallot butter.  A tangle of fried potato threads, wild mushrooms in a cream sauce and reduced braising liquids add crunch, smoothness and intensity.
